St Thibery Wine

This is a winegrowing village surrounded by vineyards. The balmy Mediterranean weather is ideal for growing grapes. There are several wine producers in the area as well as a co-op. One of the wines known as "Les Vins de Cessero" is called after the town's old Celtic name Cessero! St Thibery registered the AOC (Appellation d’origine contrôlée) on the label of the vintage 2011.

AOC (Appellation d’origine contrôlée): This refers to the unique combination of natural factors associated with any particular vineyard. It includes such factors as soil, underlying rock, altitude, slope of hill or terrain, orientation toward the sun, and microclimate (typical rain, winds, humidity, temperature variations, etc.). Even in the same area, no two vineyards have exactly the same terroir.
